Add the vegetable oil, eggs, and vanilla extract to the yogurt mixture. Whisk until fully incorporated.
In a separate bowl, whisk together the baking powder, baking soda, salt, and all-purpose flour. If using lemon zest, add it to the dry ingredients.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Once cooled, dust the top with powdered sugar if desired before serving.
