  1. Begin by washing and drying the Yukon Gold potatoes thoroughly. Carefully slice them into ½-inch thick slabs.
  2. To achieve the perfect accordion cut, place chopsticks along each side of the potato slices as guides. Make vertical cuts down the length of the potato.
  3. Once sliced, immerse the potato slices in a large bowl of cold water and let them soak for at least 30 minutes.
  4. While the potatoes soak, preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. After soaking, carefully drain the potatoes and pat them dry with paper towels.
