For the Garnish

Method
 

Preparation Steps
  1. Toast the cashews in a dry skillet over medium heat for 3–4 minutes until golden brown and fragrant.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, grated ginger, and red pepper flakes until smooth.
  3. Julienne the carrots, slice the bell peppers, chop the green onions, and roughly chop the cilantro.
  4. In a large mixing bowl, combine the carrots, bell peppers, green onions, and cilantro. Pour the dressing over and stir thoroughly.
  5. Allow the salad to sit at room temperature for about 20 minutes to let flavors meld.
  6. Just before serving, sprinkle the toasted cashews on top and serve immediately.
