Ingredients
  

  • 2 cups thinly sliced cucumber
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic minced
  • 1 teaspoon sesame seeds
  • 1 green onion sliced

Method
 

  1. Sprinkle cucumber slices with salt and let sit for 10 minutes to draw out moisture.
  2. Rinse and pat dry.
  3. In a bowl, mix rice vinegar, soy sauce, sesame oil, sugar, and garlic.
  4. Toss cucumbers with dressing.
  5. Garnish with sesame seeds and green onion before serving.
