Ingredients
  

  • 4 boneless skinless chicken breasts (pounded evenly)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces mushrooms sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 12 ounces noodles cooked and buttered
  • Fresh parsley chopped (for garnish)
  • Grated Parmesan cheese for garnish
  • ½ cup hot honey
  • 1 cup panko breadcrumbs
  • ½ cup flour
  • 2 eggs beaten

Method
 

1. Prep the Oven and Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Pat chicken breasts dry and season generously with salt and pepper.
2. Coat the Chicken
  1. Dredge each chicken breast in flour, shaking off excess.
  2. Dip into beaten eggs to coat evenly.
  3. Press into panko breadcrumbs to create a crispy crust.
3. Sear for Crunch
  1. Heat olive oil in a skillet over medium-high heat.
  2. Sear chicken on both sides until golden brown, about 3–4 minutes per side. Remove and set aside.
4. Bake to Perfection
  1. Place seared chicken in a baking dish and brush generously with hot honey.
  2. Bake for 15–20 minutes, or until the chicken's internal temperature reaches 165°F (74°C).
5. Prepare the Sauce
  1. In the same skillet, melt butter over medium heat.
  2. Add sliced mushrooms and sauté until browned, about 5 minutes.
  3. Stir in garlic, thyme, and oregano, cooking until fragrant, about 1–2 minutes.
  4. Deglaze with chicken broth, scraping up any browned bits, and reduce by half, about 5 minutes.
  5. Stir in heavy cream and simmer until the sauce thickens, about 3–4 minutes.
6. Combine and Serve
  1. Return the baked chicken to the skillet, spooning the creamy mushroom sauce over the top.
  2. Allow it to warm through for 2–3 minutes.
  3. Serve over a bed of buttered noodles and garnish with fresh parsley and grated Parmesan cheese.
