Ingredients
  

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup scrambled eggs about 4 large eggs
  • 1/2 cup cooked and crumbled breakfast sausage optional
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Sour cream and salsa for serving optional

Method
 

  1. In a skillet over medium heat, add the olive oil. Once hot, add the diced onions and bell peppers. Sauté for about 3-4 minutes until softened.
  2. In a bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with the vegetables and scramble until fully cooked. If using, add the cooked sausage and mix well.
  3. Lay the flour tortillas flat on a clean surface. Divide the scrambled egg mixture evenly between the two tortillas. Top each with 1/2 cup of shredded cheddar cheese.
  4. Roll each tortilla tightly, folding in the sides as you go to create a burrito shape.
  5. Wipe the skillet clean and return it to medium heat. Place the burritos seam-side down in the skillet. Cook for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove from the skillet and let cool for a minute before slicing in half. Serve with sour cream and salsa if desired.
