Preheat the oven to 400°F (200°C).
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Coat the chicken breasts with olive oil and then dredge them in the breadcrumb mixture.
Place the coated chicken on a baking sheet and bake for 20-25 minutes or until golden brown and cooked through.
Toast the bread slices until golden.
Spread Caesar dressing on one side of each slice of bread.
Layer the chopped romaine lettuce and crispy chicken on top of the dressing.
Top with another slice of bread, dressing side down, and cut in half to serve.
