Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 4 medium potatoes cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • ½ teaspoon red pepper flakes optional

Method
 

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. Prepare Ingredients: In a large bowl, toss the potato wedges with 1.5 tablespoons of olive oil, half the seasonings (garlic powder, onion powder, paprika, oregano, salt, and pepper), and minced garlic.
  3. Season Chicken: Pat the chicken thighs dry with a paper towel. Rub them with the remaining olive oil, then season with the rest of the spices. Drizzle with lemon juice.
  4. Arrange on Pan: Place the potatoes in the baking dish first, then nestle the chicken thighs on top. Sprinkle fresh thyme over everything.
  5. Bake: Roast in the oven for 35–40 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are crispy. For extra crispiness, broil for 2–3 minutes at the end.
  6. Serve: Let the dish rest for 5 minutes before serving. Enjoy warm!
