Method
 

Step-by-Step Instructions
  1. Wash the daikon radish under cool water and peel if desired. Slice into thin sticks about 1/4 inch thick and let dry on a kitchen towel.
  2. In a large zip-lock bag, combine daikon sticks, grated garlic, and soy sauce. Shake to coat evenly and marinate for 10 minutes.
  3. Pour potato starch onto a plate and dredge each marinated daikon stick through it, coating evenly.
  4. Heat oil in a frying pan to a depth of about 1/4 inch over medium heat until shimmering.
  5. Fry daikon sticks in a single layer for 3-5 minutes, turning until golden and crispy.
  6. Transfer fried daikon to a paper towel-lined plate to absorb excess oil and serve immediately.
