Ingredients
  

For the Fritters
  • 2 medium Zucchini Fresh and firm
  • 1 teaspoon Salt For drawing moisture
  • 2 Eggs Beaten
  • 1/2 cup Green Onions Finely chopped
  • 1/2 cup Onion Diced, yellow or red
  • 2 tablespoons Fresh Spearmint Chopped, can substitute with parsley
  • 2 tablespoons Fresh Dill Chopped, can substitute with tarragon
  • 1 cup Feta Cheese Crumble, can substitute with goat cheese
  • 1/2 cup Self-Raising Flour Use gluten-free blend if desired
  • 1/2 cup Vegetable Oil Mix of olive and sunflower oil for frying
For the Yogurt Dip
  • 1 cup Greek Yogurt Can substitute with sour cream
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1 tablespoon Minced Dill

Method
 

Preparation Steps
  1. In a medium bowl, combine Greek yogurt, minced dill, and lemon juice. Stir well and refrigerate.
  2. Grate the zucchinis using a box grater and place the grated zucchini in a large bowl.
  3. Sprinkle grated zucchini with salt and let it sit for 30 minutes. Squeeze out excess moisture with a kitchen towel.
  4. Add drained zucchini, beaten eggs, green onions, onion, spearmint, dill, and feta cheese to a mixing bowl. Fold in self-raising flour.
  5. Heat 1/2 inch of vegetable oil in a frying pan over medium heat until it reaches 170°C / 340°F.
  6. Drop spoonfuls of the mixture into the hot oil and fry for 3-4 minutes per side until golden brown.
  7. Remove fritters from oil with a slotted spoon and place on paper towels to drain excess oil.
  8. Serve warm with the yogurt dip.
