Step-by-Step Instructions
  1. In a large skillet, heat over medium-high heat and add 1 pound of lean ground beef. Cook for 5–7 minutes, breaking it up, until thoroughly browned.
  2. Stir in 2 tablespoons of tomato paste, 1 tablespoon of taco seasoning, and 1/4 cup of beef broth into the beef. Simmer for 2-3 minutes until coated in a thick sauce.
  3. Wipe the skillet clean, brush with 1 tablespoon of vegetable oil, and lay a large tortilla flat to heat for about 30 seconds.
  4. On one half of the warmed tortilla, sprinkle 1.5 cups of cheddar cheese, then spoon on your beef mixture, topped with Monterey Jack cheese.
  5. Fold the tortilla over to enclose the fillings. Cook for about 2-3 minutes on one side, then flip and cook for 2 more minutes.
  6. Transfer the quesadilla to a cutting board and rest for 1 minute, then slice into triangles, garnish with cilantro, and serve with sour cream.
