- In a large skillet, heat over medium-high heat and add 1 pound of lean ground beef. Cook for 5–7 minutes, breaking it up, until thoroughly browned.
- Stir in 2 tablespoons of tomato paste, 1 tablespoon of taco seasoning, and 1/4 cup of beef broth into the beef. Simmer for 2-3 minutes until coated in a thick sauce.
- Wipe the skillet clean, brush with 1 tablespoon of vegetable oil, and lay a large tortilla flat to heat for about 30 seconds.
- On one half of the warmed tortilla, sprinkle 1.5 cups of cheddar cheese, then spoon on your beef mixture, topped with Monterey Jack cheese.
- Fold the tortilla over to enclose the fillings. Cook for about 2-3 minutes on one side, then flip and cook for 2 more minutes.
- Transfer the quesadilla to a cutting board and rest for 1 minute, then slice into triangles, garnish with cilantro, and serve with sour cream.
