Ingredients

  • 2 lbs boneless skinless chicken breast (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • 1 tbsp honey optional, for slight sweetness
  • 1 tbsp lemon juice for freshness
  • ¼ cup Parmesan cheese optional, for extra flavor
  • ½ cup breadcrumbs optional, for crispier bites

Method

  1. Preheat the Oven – Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Chicken – Cut the chicken into bite-sized pieces and pat dry with a paper towel.
  3. Season the Chicken – In a large bowl, mix olive oil, garlic powder, onion powder, paprika, salt, black pepper, oregano, and honey. Toss the chicken in the seasoning mix until evenly coated.
  4. Coat (Optional) – If you prefer extra crunch, mix the chicken with Parmesan cheese and breadcrumbs.
  5. Bake – Arrange the chicken bites in a single layer on the baking sheet. Bake for 15-18 minutes, flipping halfway through.
  6. Check for Doneness – Ensure the internal temperature reaches 165°F (75°C) using a meat thermometer.
  7. Broil for Extra Crispiness – For a golden-brown finish, broil for 2-3 minutes at the end.
  8. Serve & Enjoy – Drizzle with lemon juice and serve with your favorite dipping sauce!

Notes

Even Sizing – Cut the chicken into uniform pieces for even cooking.
Broil at the End – This helps to get a crispy, golden-brown texture.
Meal Prep Friendly – Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
Pairing Ideas – Serve with roasted veggies, rice, or a fresh salad.
