- Begin by slicing the Fior di latte mozzarella into ½-inch thick pieces and set them aside on a plate.
- In a large mixing bowl, whisk together the eggs, adding a pinch of salt and pepper to taste.
- On a flat plate, spread out a generous layer of flour and coat both sides of each slice of bread thoroughly.
- Take one slice of the floured bread and dip one side into the egg mixture, then place it on a baking sheet.
- Dunk a slice of mozzarella into the egg mixture, then place it atop the wet side of the bread, top with another slice of bread.
- After assembling, dip the sandwich in the egg mixture again, completely covering all surfaces.
- Put your assembled sandwiches in the refrigerator for about 20-30 minutes.
- In a frying pan, heat sunflower oil over medium-high heat until it reaches approximately 179°C (399°F).
- Gently lower your chilled sandwiches into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.
- Once fried, transfer the sandwiches onto a paper towel-lined plate to absorb excess oil and serve immediately.
