For the Sandwich
  • 200 grams Fior di latte Mozzarella or high-quality non-melting cheese
  • 2 pieces Eggs one per sandwich
  • ½ cup Flour all-purpose flour
  • 4 slices Pane di Casa/Sourdough Bread or gluten-free bread
  • to taste Salt
  • to taste Pepper
For Frying
  • 2 cups Sunflower Oil or high smoke point vegetable oil

Method
 

Step-by-Step Instructions
  1. Begin by slicing the Fior di latte mozzarella into ½-inch thick pieces and set them aside on a plate.
  2. In a large mixing bowl, whisk together the eggs, adding a pinch of salt and pepper to taste.
  3. On a flat plate, spread out a generous layer of flour and coat both sides of each slice of bread thoroughly.
  4. Take one slice of the floured bread and dip one side into the egg mixture, then place it on a baking sheet.
  5. Dunk a slice of mozzarella into the egg mixture, then place it atop the wet side of the bread, top with another slice of bread.
  6. After assembling, dip the sandwich in the egg mixture again, completely covering all surfaces.
  7. Put your assembled sandwiches in the refrigerator for about 20-30 minutes.
  8. In a frying pan, heat sunflower oil over medium-high heat until it reaches approximately 179°C (399°F).
  9. Gently lower your chilled sandwiches into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.
  10. Once fried, transfer the sandwiches onto a paper towel-lined plate to absorb excess oil and serve immediately.
