- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Coat chicken breasts in mayonnaise and dredge in crushed kettle-cooked potato chips. Place on the baking sheet and bake for 15-17 minutes.
- Preheat your waffle iron while the chicken is baking.
- In a bowl, beat egg whites to soft peaks. In another bowl, mix flour, sugar, baking powder, baking soda, and salt. Combine with melted butter and buttermilk, then fold in egg whites.
- Pour batter into the preheated waffle iron and cook for about 5 minutes.
- Melt unsalted butter in a saucepan, then whisk in flour. Gradually add whole milk, stirring until thickened.
- Assemble by stacking a waffle on a plate, topping with chicken, and drizzling with gravy. Garnish with scallions if desired.
