- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, chopped fresh dill, minced fresh mint, lemon zest, and black pepper. Mix until fully combined.
- Lay one sheet of phyllo pastry on a flat surface, brush with olive oil, then layer a second sheet on top and brush again. Repeat to create three layers.
- Cut the layered phyllo into four long strips lengthwise, keeping the edges straight.
- Place a tablespoon of filling at one end of each strip, fold the sides over, and roll tightly to encapsulate the filling.
- Arrange the rolls seam-side down on the prepared baking sheet and brush the tops with olive oil.
- Bake the rolls for 18-20 minutes until golden brown.
- Prepare the chili honey by combining honey, chili flakes, and lemon juice in a saucepan over low heat. Stir and warm to slightly thicken for 3-5 minutes.
