Method
- Place onion, garlic, bay leaves, and corned beef (fat side up) in the slow cooker.
- Add contents of spice packet and pour in water to just cover the meat.
- Cover and cook on low for 8–9 hours or high for 4–5 hours.
- Preheat broiler. Remove brisket, pat dry, and brush with mustard if using.
- Broil 5–7 minutes until crispy on top.
- Slice against the grain and serve.
Notes
- Save broth for cooking cabbage or potatoes.
- Add carrots and potatoes during the last 2 hours for a full meal.
