Method
 

Step-by-Step Instructions
  1. In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of red lentils, reduce heat to low, cover, and simmer for 10-12 minutes until tender.
  2. Allow lentils to cool slightly, then transfer to a large mixing bowl. Grate sweet potato and finely dice onion, adding them to the bowl along with minced garlic and spices.
  3. Fold in chopped cilantro and flour into the mixture. Mix until combined and let rest for 5-10 minutes.
  4. Heat 2-3 tablespoons of olive oil in a skillet over medium heat until shimmering.
  5. Form small patties from the mixture and fry in the skillet for 3-4 minutes on each side until golden brown.
  6. To prepare sauce, blend avocado, cilantro, garlic, yogurt, and lime juice until smooth.
  7. Serve patties on a platter and drizzle creamy avocado sauce or serve it on the side.
