Ingredients
  

  • 3 –4 lb corned beef brisket with spice packet
  • 4 cups beef broth
  • 1 lb carrots peeled and cut
  • 1 ½ lbs potatoes halved
  • 1 onion quartered
  • ½ head green cabbage cut into wedges

Method
 

  1. Place carrots, potatoes, and onion in the slow cooker.
  2. Top with corned beef and sprinkle with spice packet.
  3. Pour in broth, cover, and cook on low for 8–9 hours.
  4. Add cabbage wedges during the last 1–2 hours of cooking.
  5. Slice corned beef and serve with vegetables.

Notes

  • Cut cabbage into large chunks to prevent it from getting mushy.
  • Use leftover meat for Reuben sandwiches the next day.
