- Heat a skillet over medium heat and sear the seasoned short ribs for about 20 seconds on each side until a golden-brown crust forms.
- In the same skillet, briefly sauté chopped mushrooms, baby carrots, and minced garlic for about 2–3 minutes until they soften.
- In a bowl, whisk together beef broth, red wine, and tomato paste, then pour this over the ribs and vegetables in the crockpot.
- Securely cover the crockpot lid, set it to low, and let it cook for about 8 hours.
