  • 2 pounds Boneless, Skinless Chicken Breasts Trim excess fat.

  • 8 ounces Cream Cheese Soften before use.
  • 2 cups Shredded Medium Cheddar Cheese Can substitute with sharp cheddar or Pepper Jack.
For the Pasta
  • 8 ounces Spaghetti Noodles Choose any preferred pasta type.

Step-by-Step Instructions for Crockpot Cheesy Chicken Spaghetti
  1. Start by spraying the inside of your crockpot insert with cooking spray to prevent sticking.
  2. Place the trimmed boneless, skinless chicken breasts at the bottom of the crockpot, laying them flat.
  3. In a mixing bowl, combine petite diced tomatoes, cream of chicken soup, cream of mushroom soup, and water. Stir in chicken bouillon paste, Italian seasoning, onion powder, and garlic powder, mixing until well combined. Pour it evenly over the chicken breasts in the crockpot.
  4. Cover the crockpot and cook on LOW for 6-7 hours.
  5. After 6-7 hours, check for doneness by seeing if the chicken shreds easily with a fork. Use two forks to shred the chicken directly in the crockpot.
  6. Add softened cream cheese and shredded cheddar cheese to the chicken mixture in the crockpot. Stir thoroughly until combined and melted.
  7. About 10 minutes before the cheese mixture is ready, boil water in a pot, adding a pinch of salt. Cook the spaghetti according to the package instructions until al dente.
  8. Once the creamy chicken mixture is ready, gently fold in the drained spaghetti, ensuring each noodle is coated in the cheesy sauce.
