Ingredients
  

  • 8 slices of white or whole wheat bread
  • 8 ounces cream cheese softened
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large cucumber thinly sliced
  • Fresh parsley or dill for garnish optional

Method
 

  1. In a medium bowl, combine the softened cream cheese, dill, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well combined.
  2. Spread an even layer of the cream cheese mixture on one side of each slice of bread.
  3. Layer the cucumber slices evenly on four of the bread slices, covering the cream cheese.
  4. Top with the remaining four slices of bread, cream cheese side down, to form sandwiches.
  5. For a neat presentation, trim the crusts off the sandwiches and cut them into quarters or triangles.
  6. If desired, garnish with fresh parsley or dill before serving.
  7. Chill the sandwiches in the refrigerator for about 30 minutes before serving for the best flavor.
