- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or cooking spray.
- In a medium saucepan, melt ½ cup of unsalted butter over medium heat, then sift in ⅓ cup of natural cocoa powder and stir until smooth.
- In a large mixing bowl, mash 3 very ripe bananas until smooth and combine with the butter-cocoa paste.
- Add 1 cup of light brown sugar, ½ cup of sour cream, 1 large egg, 1 teaspoon of vanilla extract, ½ teaspoon of table salt, and 1 teaspoon of baking soda. Whisk until mostly smooth.
- Gently fold in 1 ½ cups of all-purpose flour and 1 cup of chocolate chips until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with remaining ½ cup of chocolate chips.
- Bake for 50 minutes, then reduce temperature to 325°F (160°C) and bake for an additional 10 minutes, until a toothpick comes out clean.
- Allow the bread to cool in the pan for 15 minutes before transferring to a cooling rack. Let cool for at least an hour before slicing.
