Method
- Preheat oven to 500°F (260°C).
- Rub roast with olive oil and season with spices.
- Place on a rack in a roasting pan.
- Roast for 5 minutes per pound, then turn off oven and leave roast inside for 2 hours. Do not open the door.
- Remove and let rest before slicing thinly.
Notes
- Perfect for sandwiches, wraps, or serving with mashed potatoes. Store slices in the fridge for up to 5 days.
