  • 1 cup roasted red peppers finely chopped
  • 1 cup olives any variety, chopped finely
  • 1 cup marinated artichokes chopped
  • 2 teaspoons dried herbs e.g., oregano, basil
For Added Crunch
  • 1 cup nuts optional for coating; pecans or walnuts
For Seasoning
  • 1 teaspoon seasonings salt and pepper to taste

Method
 

Preparation
  1. Combine softened cream cheese, finely chopped roasted red peppers, olives, marinated artichokes, and dried herbs in a mixing bowl. Blend until smooth, avoiding overmixing to retain structure.
  2. Place a large piece of plastic wrap on the counter. Spoon the cream cheese mixture in the center and shape it into a log. Wrap tightly in plastic wrap.
  3. If using nuts, chop them finely and spread on a plate. Unwrap one end of the plastic wrap and roll the log in the chopped nuts until fully coated.
  4. Seal the log back in the plastic wrap and refrigerate for at least 2-3 hours or overnight.
  5. When ready to serve, unwrap the log and slice it into rounds, about 1-inch thick. Serve on a platter with crackers or bread.
