- Preheat your oven to 375°F (190°C) while you prepare the filling.
- In a large skillet, heat olive oil over medium heat. Add cubed potatoes seasoned with salt and pepper and cook until golden, about 10-12 minutes.
- In the same skillet, add chopped bacon and cook until crispy, about 5-7 minutes. Remove and crumble it.
- Whisk eggs until fluffy and then cook in the skillet over medium-low heat while stirring gently until just set, about 3-5 minutes.
- Take fresh tortillas, place sautéed potatoes, crumbled bacon, scrambled eggs, and sprinkle shredded cheese in each.
- Arrange on a baking sheet and bake for 10-12 minutes until cheese is melted and bubbly.
- Let the tacos cool for a minute then garnish with salsa and avocado slices before serving.
