Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 finely sliced onion and sauté for 3-4 minutes until it turns translucent. Next, toss in 2 minced garlic cloves and sauté for an additional 30 seconds until fragrant.
  2. Stir in 2 cups of thawed and drained spinach into the skillet. Cook for 2-3 minutes, seasoning the mixture with salt and pepper, then mix in ½ cup of sour cream until creamy.
  3. Preheat your oven to 175°C (347°F). Meanwhile, season 2 salmon fillets with salt and pepper. Sear each side of the salmon for 2 minutes until golden.
  4. Lightly grease a baking dish and place the salmon fillets skin-side down. Spoon the creamy spinach mixture evenly over each fillet and sprinkle 1 cup of shredded mozzarella cheese on top.
