Ingredients

For the Muffin Base
  • 1 head Cauliflower Substitution: Broccoli can be used for a different taste.
  • 3 large Eggs Note: Flax eggs make a great vegan alternative.
  • 1 cup Cheese (e.g., cheddar or mozzarella) Substitution: Nutritional yeast can replace cheese for a dairy-free option.
  • 1 cup Almond Flour Note: Can swap with coconut flour, but adjust the measurement as it’s denser.
For the Leavening
  • 1 tbsp Baking Powder No substitutions necessary here!
For Flavor
  • 2 tsp Seasonings (e.g., garlic powder, salt, pepper) Feel free to modify according to your flavor preferences.

Equipment

  • Oven
  • Muffin tin
  • Mixing Bowl
  • Spatula

Method

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease the muffin tin lightly or line it with paper liners.
  2. Steam or microwave the cauliflower florets until tender (about 5–7 minutes) and chop finely or pulse in a food processor.
  3. In a mixing bowl, combine the processed cauliflower with eggs, shredded cheese, and almond flour, stirring until well mixed.
  4. Sprinkle the baking powder and chosen seasonings over the mixture and gently fold until just combined, being careful not to overmix.
  5. Spoon the cauliflower mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
  7. Allow the muffins to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
