- Begin by shredding or chopping 2 cups of rotisserie or leftover chicken into bite-sized pieces. Place the chicken in a large mixing bowl.
- Finely chop 1/2 cup of celery and 1/3 cup of onion, then dice 1 cup of your selected sweet apples. Toss these ingredients into the bowl with the chicken.
- Fold in 1/3 cup of dried cranberries and 1/3 cup of chopped toasted almonds or pecans. Gently stir to evenly distribute the flavors.
