Ingredients
  

For the Steak
  • 1 lb Flank Steak or round steak
  • 2 tbsp Olive Oil can substitute with neutral oil
  • 1 tbsp Chipotle Peppers in Adobo adjust to heat preference
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 1 tsp Cumin can swap for taco seasoning
  • 1 tsp Oregano
  • 1 tsp Kosher Salt adjust to taste
  • 1 tsp Ground Black Pepper adjust to taste
For the Rice
  • 1 cup Jasmine Rice can substitute brown rice or quinoa
  • 1 cup Cilantro fresh, chopped
  • 2 tbsp Lime Juice preferably fresh
For the Salsa
  • 1 cup Corn fresh or canned
  • 1 small Red Onion finely diced
  • 1 small Jalapeño Pepper chopped, adjust to taste
For the Guacamole
  • 2 whole Avocados ripe
  • 1 tbsp Lime Juice adjust to taste
  • 1 small Red Onion diced
  • 1 small Jalapeño chopped, adjust to taste
  • 1 tsp Kosher Salt to taste
Optional Toppings
  • Black Beans or pinto beans
  • Shredded Romaine Lettuce
  • Cheese or dairy-free
  • Hot Sauce
  • Sour Cream

Method
 

Marinating and Cooking the Steak
  1. Combine olive oil, chipotle peppers, garlic powder, chili powder, cumin, oregano, salt, and pepper in a bowl. Marinate steak for at least 30 minutes.
  2. Heat a skillet over high heat. Sear marinated steak for 5-7 minutes on each side until cooked to preference. Let it rest for 5 minutes before slicing.
Preparing the Rice
  1. Rinse jasmine rice under cold water until clear. Cook in 2 cups of water for about 15 minutes. Fluff and stir in cilantro, lime juice, and a pinch of salt.
Making the Corn Salsa
  1. Combine corn, red onion, jalapeño, and cilantro in a bowl. Add lime juice, cumin, and salt, mixing well.
Preparing the Guacamole
  1. Mash avocados in a bowl with lime juice, red onion, jalapeño, and salt until creamy and well mixed.
Assembling the Bowls
  1. Layer rice, sliced steak, corn salsa, guacamole, and desired toppings in each bowl to serve.
