- In a large mixing bowl, combine the coleslaw mix, rinsed black beans, and drained corn. Dice the jalapeño and red bell pepper, then add to the bowl along with sliced green onions and chopped cilantro. Sprinkle taco seasoning and ground cumin over the mixture, then gently toss until well combined.
- In a separate bowl, whisk together the sour cream, mayonnaise, fresh lime juice, and chipotle sauce until smooth and creamy. Adjust the flavor as needed with more lime juice or chipotle sauce.
- Pour the dressing over the salad base in the mixing bowl and gently toss, ensuring all ingredients are evenly coated. Fold in most of the Chili Cheese Fritos, reserving some for topping.
- Transfer the salad to a serving bowl or individual plates. Top with the reserved Chili Cheese Fritos and additional cilantro or cheddar if desired. Serve immediately.
