Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (180°C).
  2. In a large oven-safe casserole or cast-iron braiser, heat olive oil over medium heat. Add onion, carrot, and celery, seasoning with salt, pepper, garlic powder, and red pepper flakes. Sauté for 7–10 minutes until tender.
  3. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Pour in crushed tomatoes, tomato paste, and vegetable stock. Add bay leaves and dill. If tomatoes are acidic, adjust with sugar. Bring mixture to a gentle simmer for 5 minutes.
  5. Gently fold in the drained butter beans.
  6. Cover with a lid or foil and bake for 40–50 minutes.
  7. Remove bay leaves, taste for seasoning adjustments, drizzle with olive oil, and garnish with parsley and feta cheese if using.
