  2. Next, thinly slice the red onion, cucumber, and red bell pepper for a delightful crunch.
  3. Halve the cherry tomatoes and place all the prepped ingredients into separate bowls.
  4. In a small bowl, whisk together the fresh lime juice, honey, olive oil, salt, and black pepper until smooth.
  5. In a large mixing bowl, layer the sliced mango, red onion, cucumber, red bell pepper, and halved cherry tomatoes.
