Ingredients

For the Filling
  • 1 cup shredded Mozzarella cheese Provides creaminess and stretchiness; for a dairy-free option, use dairy-free cheese.
  • 1/2 cup crumbled Feta cheese Adds a salty, tangy flavor; consider vegan feta for a plant-based version.
  • 2 cups fresh Spinach Packed with nutrients; substitute with kale or Swiss chard if needed.
  • 1 small Tomato Use diced tomato or cherry tomatoes for added juiciness.
  • 1 small Red Onion Offers a mild, sweet crunch; substitute with yellow or white if needed.
  • to taste Black Pepper Enhances flavors; add chili flakes for extra heat.
For the Base
  • 4 pieces Tortillas Use whole wheat or regular; gluten-free tortillas are also an option.
  • 2 tablespoons Olive Oil Used for frying; avocado oil can be an alternative.

Equipment

  • non-stick skillet
  • Mixing Bowl
  • sharp knife
  • Spatula
  • Cutting Board

Method

Step-by-Step Instructions
  1. In a mixing bowl, combine shredded mozzarella, crumbled feta, fresh spinach, diced tomato, and thinly sliced red onion. Season with black pepper to taste. Stir until well combined.
  2. Lay one tortilla flat on a clean surface. Spread one-fourth of the filling over half of the tortilla, then fold the tortilla over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once hot, place the quesadilla in the skillet and cook for 3-4 minutes until golden brown.
  4. Flip the quesadilla carefully using a spatula, adding more olive oil if needed, and cook the other side for another 3-4 minutes until golden brown and the cheese has melted.
  5. Remove the quesadilla from the skillet, let it cool slightly, and slice into wedges. Serve warm with a side salad or dipping sauce.
