Preparation Steps
  1. Start by spraying the insert of your slow cooker with nonstick cooking spray. Place the chicken breasts in a single layer in the slow cooker.
  2. In a medium-sized mixing bowl, combine garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Stir until blended and pour over chicken.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until the chicken is tender.
  4. In a separate bowl, mix Greek yogurt, grated cucumber, chopped parsley, and salt for the tzatziki sauce. Stir until combined, cover, and refrigerate for at least 1 hour.
  5. Once cooked, remove chicken from the slow cooker and shred with two forks.
  6. Serve the shredded chicken in warm pita, topped with tzatziki sauce and fresh veggies.
