Preparation Steps
- Start by spraying the insert of your slow cooker with nonstick cooking spray. Place the chicken breasts in a single layer in the slow cooker.
- In a medium-sized mixing bowl, combine garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Stir until blended and pour over chicken.
- Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours until the chicken is tender.
- In a separate bowl, mix Greek yogurt, grated cucumber, chopped parsley, and salt for the tzatziki sauce. Stir until combined, cover, and refrigerate for at least 1 hour.
- Once cooked, remove chicken from the slow cooker and shred with two forks.
- Serve the shredded chicken in warm pita, topped with tzatziki sauce and fresh veggies.
