Ingredients
  

For the Chicken
  • 1 pound Boneless, Skinless Chicken Breasts or Thighs Thighs provide juiciness.
For the Aromatics
  • 1 medium White Onion Can substitute with yellow onion.
  • 1 tablespoon Minced Ginger Fresh is preferable.
  • 4 cloves Minced Garlic Fresh is best.
For the Cooking Liquid
  • 1 cup Chicken Broth Low-sodium preferred.
For the Flavor
  • 2 tablespoons Lemon Juice Use fresh for best flavor.
  • 2 tablespoons Ghee Can substitute with olive oil.
  • 1 tablespoon Garam Masala
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Black Pepper
For the Sauce
  • 2 tablespoons Tomato Paste Can substitute with crushed tomatoes.
  • 1 can Canned Coconut Milk Full-fat is best for creaminess.
  • 1 tablespoon Arrowroot Flour Optional for thickening.
For Garnish
  • 1/4 cup Cilantro Use as desired.

Method
 

Step-by-Step Instructions
  1. Begin by dicing the chicken into bite-sized pieces and chopping the onion finely. Add both into the slow cooker.
  2. In a separate bowl, mix together all the spices and then add the minced garlic, minced ginger, ghee, chicken broth, lemon juice, and tomato paste. Stir until well combined, then pour over the chicken and onion.
  3. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  4. After cooking, add a can of well-shaken coconut milk. If using arrowroot flour, mix it with water first, then stir it into the sauce.
  5. Cover again and let it meld on low heat for an additional 10-15 minutes.
  6. Serve the chicken tikka masala over cauliflower or basmati rice, garnished with freshly chopped cilantro.

Notes
