- Begin by dicing the chicken into bite-sized pieces and chopping the onion finely. Add both into the slow cooker.
- In a separate bowl, mix together all the spices and then add the minced garlic, minced ginger, ghee, chicken broth, lemon juice, and tomato paste. Stir until well combined, then pour over the chicken and onion.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
- After cooking, add a can of well-shaken coconut milk. If using arrowroot flour, mix it with water first, then stir it into the sauce.
- Cover again and let it meld on low heat for an additional 10-15 minutes.
- Serve the chicken tikka masala over cauliflower or basmati rice, garnished with freshly chopped cilantro.
