  • 1 medium Sweet Potato peeled and cubed
  • 1 can Chickpeas drained and rinsed
  • 1 cup Coconut Milk
  • 2 tablespoons Curry Powder
  • 1 tablespoon Olive Oil for sautéing
  • 1 cup Vegetable Broth
  • 1 cup Spinach fresh or frozen
  • to taste Salt
  • to taste Pepper

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium heat.
  2. Add cubed sweet potato and fry for 5 minutes.
  3. Stir in curry powder and cook for 1 minute until fragrant.
  4. Pour in vegetable broth and coconut milk, bring to a boil.
  5. Add chickpeas, reduce heat and simmer for 20 minutes until sweet potato is tender.
  6. Mix in the spinach and cook until wilted, then season with salt and pepper.
  7. Serve hot with rice or bread.
