  • 1/2 cup Basil Vinaigrette homemade recommended

For Garnish
  • 1/4 cup Shredded Parmesan Cheese optional

Method
 

Step-by-Step Instructions
  1. Cook the Cheese Tortellini in salted boiling water according to package instructions until they float, about 3-5 minutes. Drain and rinse with cold water.
  2. Prepare the vegetables: wash and chop the grape tomatoes, red bell pepper, cucumber, and slice the green onions.
  3. In a large mixing bowl, combine the cooled tortellini with the prepared vegetables.
