Ingredients
  

Salad Base
  • 2 cups pasta any type you love
  • 1 can canned tuna drained
  • 1 cup cherry tomatoes halved
  • 1 large avocado diced
  • 1 cup fresh corn frozen corn works too
  • 2 stalks spring onion sliced
Dressing
  • 1/2 cup mayonnaise can substitute with Greek yogurt
  • 1/4 cup sour cream can substitute with plain yogurt
  • 1 tablespoon mustard Dijon or yellow
  • 2 tablespoons lemon juice for brightness
  • 1 teaspoon lemon zest
  • 2 tablespoons parsley chopped

Method
 

Cooking Instructions
  1. Step 1: Cook Pasta. Bring a large pot of salted water to a boiling point. Add pasta and cook until al dente, about 10 minutes. Add corn during the last 2-3 minutes. Drain and cool under cold running water.
  2. Step 2: Prep Vegetables. Halve the cherry tomatoes, dice avocado, and slice spring onion. Place in a large bowl.
  3. Step 3: Flake Tuna. Drain canned tuna and flake it into the vegetable bowl.
  4. Step 4: Make Dressing. In a small bowl, whisk together mayonnaise, sour cream, mustard, lemon juice and zest. Mix in parsley and season with salt and pepper.
  5. Step 5: Combine Ingredients. Add cooled pasta and corn to the vegetable-tuna mix. Fold everything together gently.
  6. Step 6: Toss & Serve. Before serving, gently toss the salad again. Optionally, add avocado right before serving.
