Step-by-Step Instructions for Mochi Donuts
- In a stand mixer, combine all-purpose flour, tapioca starch, granulated sugar, baking powder, and salt until well blended. Gradually add a room-temperature egg and half a cup of water, mixing until a smooth dough forms.
- Divide the dough into small pieces of about 7 grams each, rolling them into balls and shaping them into rings. Place on parchment paper.
- Heat vegetable oil in a medium-sized saucepan to a temperature between 170-180°C (338-356°F).
- Carefully lower 2-3 shaped donuts into the hot oil, frying for about 1-2 minutes on each side until golden brown.
- For each glaze, heat heavy cream in a saucepan with either strawberry puree or matcha powder. Pour over chopped chocolate and stir until smooth and glossy.
- Dip cooled donuts into the prepared ganache glaze and set on a rack to let the glaze set properly.
- Melt some white chocolate and pour into a piping bag for decorating. Optional toppings include freeze-dried strawberries or colorful sprinkles.
