Method
 

Step-by-Step Instructions
  1. In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add minced garlic and ginger paste, stirring for 30–60 seconds until fragrant.
  2. Introduce sliced mushrooms to the pot, stirring continuously for 3–5 minutes until soft and slightly browned.
  3. Pour in chicken stock and water, followed by soy sauce. Bring to a boil, then reduce to a simmer for 10 minutes.
  4. In a separate pot, boil water and cook ramen noodles for 2–4 minutes, then drain and set aside.
  5. In the last 2 minutes of simmering, stir in chopped baby bok choy until just tender.
  6. Assemble bowls by draining noodles into serving bowls and ladling hot broth over them.
  7. Top bowls with sliced grilled chicken, soft-boiled egg, green onions, and sesame seeds.
