Ingredients
  

  • 2 large chicken breasts boneless, skinless
  • 8 ounces cream cheese softened
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ medium onion chopped
  • 3 cloves garlic minced
  • ¾ cup chicken broth
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes optional for spice
  • Fresh parsley chopped, for garnish
 

Method
 

  1. Prepare the Ingredients: Take the cream cheese out of the fridge 20 minutes before cooking to soften. Season chicken breasts with garlic powder, salt, and pepper.
  2. Cook the Chicken: Heat butter and olive oil in a large skillet over medium heat. Add chicken breasts and sear for 5-6 minutes per side until golden brown. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, sauté chopped onion until translucent (about 3 minutes). Add minced garlic and cook for 1 more minute. Pour in chicken broth, scraping up browned bits from the skillet. Stir in softened cream cheese, Italian seasoning, and red pepper flakes. Whisk until smooth.
  4. Combine and Cook: Return the cooked chicken to the skillet, spooning sauce over each piece. Cover and simmer on low heat for 5-7 minutes, or until the chicken is cooked through and tender.
  5. Serve and Garnish: Sprinkle with fresh parsley and serve hot. Pair with your favorite low-carb sides like cauliflower rice or sautéed spinach.
