Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 packet ranch seasoning mix
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Method

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and half of the ranch seasoning mix.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken for 4-5 minutes per side until golden brown, then remove from the skillet and set aside.
  3. Make the Creamy Sauce: Lower the heat and add heavy cream to the skillet. Stir in sun-dried tomatoes, Parmesan cheese, garlic powder, onion powder, dried basil, red pepper flakes, and the remaining ranch seasoning mix. Let it simmer for 2-3 minutes.
  4. Combine Everything: Return the chicken to the skillet, spooning the sauce over the top. Cover and let it simmer for another 8-10 minutes until the chicken is fully cooked and the sauce thickens.
  5. Serve & Enjoy: Let the dish rest for a couple of minutes before serving. Garnish with extra Parmesan or fresh herbs if desired. Serve hot with pasta, rice, or roasted vegetables.

Notes

    • If the sauce becomes too thick, add a splash of milk or chicken broth to loosen it up.
    • Adjust spice levels by increasing or reducing the red pepper flakes.
    • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a little added liquid to maintain creaminess.
    • For a low-carb option, serve with cauliflower rice or zucchini noodles.
