Heat olive oil in a large skillet over medium heat.
Add chopped onion and sauté until softened, about 3-4 minutes.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add ground turkey to the skillet. Cook until browned and fully cooked, breaking it apart as it cooks.
Toss in diced sweet potatoes and chopped bell pepper. Season with smoked paprika, cumin, salt, and pepper. Stir well to combine.
Cover and cook for 10-12 minutes, stirring occasionally, until sweet potatoes are tender.
Add chopped spinach and cook for another 2-3 minutes until wilted.
Remove from heat and garnish with fresh parsley.
