Ingredients
  

For the Roasted Sweet Potatoes
  • 2 cups Sweet Potatoes peeled and cubed
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Pan-Seared Chicken
  • 1 pound Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil for cooking
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Fluffy Rice Base
  • 2 cups White or Brown Rice cooked
  • 4 cups Water or Chicken Broth for cooking rice
For the Creamy Spiced Sauce
  • 1 cup Greek Yogurt or Mayonnaise
  • 2 tablespoons Lime Juice
  • 1 tablespoon Sriracha adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
For Optional Add-ins & Garnish
  • 1 cup Fresh Vegetables like spinach or broccoli
  • 1/4 cup Fresh Herbs Cilantro or Parsley

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes and toss with olive oil, paprika, garlic powder, salt, and pepper. Roast for 20-25 minutes until tender.
  2. Cook the chicken in a skillet with garlic powder, onion powder, salt, and pepper in olive oil over medium-high heat for 5-7 minutes until cooked through.
  3. Mix Greek yogurt (or mayonnaise) with lime juice, sriracha, cumin, paprika, and salt in a bowl until creamy.
  4. Assemble the bowls with rice, roasted sweet potatoes, chicken, and drizzle with the sauce. Garnish with herbs.
