Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the eggplant. Arrange the slices on the baking sheet in a single layer.
Make the seasoning mix. In a small bowl, whisk together olive oil, garlic powder, smoked paprika, cumin, oregano, salt, and pepper.
Coat the eggplant. Brush both sides of each slice with the seasoning mix.
Roast. Bake for 20–25 minutes, flipping halfway through, until the eggplant is golden brown and tender.
Garnish and serve. Sprinkle with fresh parsley and serve warm or at room temperature.
