Method
Make the Crust:
- Crush the Lucky Charms cereal in a food processor or place it in a plastic bag and crush with a rolling pin.
- Mix with melted butter until combined.
- Press the mixture into the bottom of a lined 9x13-inch baking dish. Refrigerate while preparing the filling.
Prepare the Cheesecake Filling:
- Beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assemble the Bars:
- Spread the cheesecake filling evenly over the prepared crust.
- Sprinkle Lucky Charms marshmallows on top for decoration.
Chill and Serve:
- Cover and refrigerate for at least 4 hours until the bars are set.
- Slice into squares and serve chilled.
Notes
- Store in an airtight container in the refrigerator for up to 5 days.
- If freezing, wrap bars individually and freeze for up to 2 months (add marshmallows after thawing).
- For extra crunch, add crushed pretzels or white chocolate chips to the crust.
