Ingredients
  

For the Crust:
  • 3 cups Lucky Charms cereal
  • ½ cup unsalted butter melted
For the Cheesecake Filling:
  • 16 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
For Topping:
  • Lucky Charms marshmallows

Method
 

Make the Crust:
  1. Crush the Lucky Charms cereal in a food processor or place it in a plastic bag and crush with a rolling pin.
  2. Mix with melted butter until combined.
  3. Press the mixture into the bottom of a lined 9x13-inch baking dish. Refrigerate while preparing the filling.
Prepare the Cheesecake Filling:
  1. Beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assemble the Bars:
  1. Spread the cheesecake filling evenly over the prepared crust.
  2. Sprinkle Lucky Charms marshmallows on top for decoration.
Chill and Serve:
  1. Cover and refrigerate for at least 4 hours until the bars are set.
  2. Slice into squares and serve chilled.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • If freezing, wrap bars individually and freeze for up to 2 months (add marshmallows after thawing).
  • For extra crunch, add crushed pretzels or white chocolate chips to the crust.
