Ingredients
  

  • Full-fat cream cheese: 8 oz 225 g
  • Fresh raspberries: 12–18
  • Granulated sugar: 1/4 cup
  • Powdered sugar: 1 tbsp optional, for garnish
  • Egg: 1 large
  • Vanilla extract: 1 tsp
  • Pre-made pie crust: 1 sheet

Method
 

  1. Preheat the Oven
  2. Preheat your oven to 350°F (175°C).
  3. Grease a mini muffin tin or line it with paper liners to prevent sticking.
  4. Prepare the Crust
  5. Roll out the pre-made pie crust on a lightly floured surface.
  6. Cut the crust into small circles using a cookie cutter (approximately 2 inches in diameter).
  7. Press each circle into the mini muffin tin, forming small crusts.
  8. Make the Cream Cheese Filling
  9. In a medium bowl, beat the cream cheese until smooth and creamy.
  10. Add the granulated sugar, egg, and vanilla extract, mixing until fully combined.
  11. Assemble the Bites
  12. Spoon the cream cheese filling into each prepared crust, filling them about 3/4 full.
  13. Place one fresh raspberry on top of the filling, pressing it slightly into the mixture.
  14. Bake
  15. Bake for 18–20 minutes or until the filling is set and the crust is golden brown.
  16. Remove the tin from the oven and let the bites cool for 5–10 minutes before transferring them to a wire rack.
  17. Garnish and Serve
  18. Once completely cooled, dust with powdered sugar for a beautiful finish.
