Method
Preheat and Prepare:
- Preheat your oven to 400°F and set out a baking sheet.
Season the Ingredients:
- Trim any fat from the chicken and cut it into bite-sized pieces. Place the chicken in a large bowl and toss with 1 tablespoon of olive oil.
- In another bowl, toss the halved baby potatoes with the remaining olive oil.
- Combine paprika, poultry seasoning, and black pepper in a small bowl. Sprinkle half the seasoning over the chicken and the other half over the potatoes. Toss to coat evenly.
Roast the Potatoes:
- Spread the seasoned potatoes on the baking sheet in a single layer. Roast for 20 minutes, flipping halfway through for even cooking.
Cook the Chicken:
- While the potatoes roast, heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 7–10 minutes, stirring occasionally, until browned and fully cooked.
Add Garlic and Butter:
- Reduce the heat to medium and add the butter and minced garlic to the skillet. Stir until the butter is melted and the garlic is fragrant, about 1 minute.
Combine and Sauce:
- Add the roasted potatoes to the skillet with the chicken. Toss to combine.
- Pour the garlic parmesan wing sauce over the mixture and toss until everything is evenly coated.
Add Cheese and Melt:
- Sprinkle the shredded mozzarella over the chicken and potatoes. Cover the skillet with a lid and let the cheese melt for about 5 minutes.
Serve and Enjoy:
- Once the cheese is melted and gooey, remove from heat and serve immediately. Enjoy the cheesy, garlicky goodness!
