Ingredients
  

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic minced
  • ½ teaspoon red pepper flakes

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. Rub the chicken with olive oil and season with paprika, ½ teaspoon salt, garlic powder, and onion powder.
  4. In a bowl, mix the cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and the remaining ½ teaspoon salt until well combined.
  5. Stuff each chicken breast with the spinach mixture, securing with toothpicks if needed.
  6. Place the stuffed chicken on a greased baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 5 minutes before serving. Enjoy!

Notes

    • Use fresh spinach for the best texture, but if using frozen, make sure to squeeze out excess moisture.
    • For a crispy exterior, sear the chicken in a skillet for 2-3 minutes per side before baking.
