Ingredients
  

  • 1 tablespoon olive oil
  • 1 small yellow onion chopped (about ½ cup)
  • 2 garlic cloves finely minced (or 1 ½ teaspoons garlic powder)
  • 2 ½ cups low-sodium chicken broth
  • 2 4 oz cans diced green chilies
  • 1 ½ teaspoons ground cumin
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • Juice from ½ small lime
  • Salt and freshly ground black pepper to taste
  • 2 15 oz cans great northern beans, drained and rinsed
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup corn frozen or fresh
  • 2 heaping cups cooked chicken shredded (rotisserie or leftover chicken)
Topping Suggestions:
  • Fresh cilantro
  • Shredded cheese
  • Tortilla chips
  • Green onions
  • Avocado slices

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft, about 3-4 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth, diced green chilies, cumin, cayenne pepper, oregano, paprika, lime juice, salt, and pepper.
  5. Add the beans, corn, and shredded chicken. Stir to combine.
  6. Simmer uncovered over medium-low heat for 15-20 minutes to meld flavors.
  7. Remove from heat and stir in sour cream or Greek yogurt until creamy and smooth.
  8. Ladle into bowls and top with your choice of cilantro, cheese, tortilla chips, green onions, or avocado.
  9. Serve hot and enjoy!

Notes

  • For extra heat, add more cayenne or diced jalapeños.
  • Swap sour cream for Greek yogurt for a healthier, protein-packed version.
  • This chili freezes well. Store in airtight containers for up to 3 months.
